Best in spring. About 15 cm prawn with beautifully boiled red and white stripes.
Called "Kuruma (wheel)" prawn in Japanese as its stripes look like a wheel when it curls up. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
