Carmo de Minas area, a production area of ​​specialty coffee that represents Brazil.

It is one of the most famous specialty coffee producing areas in Brazil because of its high altitude, rich soil and unique terroir.
There is an IP plantation with a 300 hectare coffee field in this area.
Alta Gracia is a special plot selected as one of the highest areas of the farm.
The farmer is the father of Mr. Luis Paulo, the central figure of Carmo Coffee.

Only Yellow Bourbon and Red Bourbon are planted in this plot, and selective picking with specialty coffee specifications is performed.
The Yellow Honey process harvests and cleans ripe cherries, spreads them on the patio, leaving the pulping and mucilage, and dries them.
As it dries, the mucilage becomes a sweet mucus, which is honey-like and is therefore named honey coffee.

The degree of roasting will be lightly roasted so that you can enjoy the rich flavor as it is.

Yellow honey process
・ Harvest ripe cherries and
・ Wash with water
・ Remove overripe cherries floating in water, pulping,
・ Spread the mucilage on the patio and leave it for 2 days.
After 2 days, stir to ensure uniform drying.

As it dries, the mucilage becomes a sweet mucus, which is named honey coffee because it looks like honey.
Another characteristic of this method is that natural fermentation occurs during drying on the patio, resulting in a sweet coffee.

Drying days are 18-25 days.

Excellent compatibility with cherry pie
It features a Brazilian nutty texture and a honey-like thick texture and sweetness peculiar to yellow honey.
As it cools down, a fruity acidity like cherries and yuzu comes out.
